An unforgettable New Year’s Eve experience inspired by ancient fire ceremonies.In the ancient cultures of Mesoamerica, Fuego Nuevo symbolized the dawn of a new cycle, an act of burning away the old and welcoming the new with reverence and hope.

At NÜ, we honor this spirit through an evening of exceptional gastronomy and music, weaving together tradition, flavor, and sound.

The night begins with a simple yet powerful ambiance that ushers us into the new year. A journey of light and sound unfolds through a seaside ceremony—a symbolic act of unity, renewal, and purity—followed by a creative three-course menu and a musical performance to dance under the stars and celebrate the new year in NÜ’s garden.

Please note: the ritual and ceremony inspired by Fuego Nuevo will be held exclusively for Namron hotel guests. At NÜ, we celebrate through the artistry of cuisine and music, in harmony with Tulum’s vibrant energy.

Scallop ceviche with coconut, roasted habanero, and soursop leche de tigre

Prime beef fillet with recado negro, red wine and cacao reduction, and charcoal potato croquette

Catch of the day wrapped in banana leaf with hoja santa butter and pea purée

Dessert
Ruby chocolate ganache sphere with strawberry, raspberry, and grapefruit compote, red mirror glaze, and sablé cookie base

Roasted corn cream with epazote oil and dried chili powder.

Main Course

Tetela filled with ricotta, squash, bean purée, avocado leaf, and quelites.
